Back about 90 years now, Swiss Confectionery was the premiere bakery in New Orleans. If you wanted a wedding cake, that's where you went. And Grandpa made wedding cakes with almond cake, buttercream, and a pineapple filling. That's what you got for your wedding cake because that's all he made. The family-run Swiss Confectionery, generation after generation made almond cake with pineapple filling for wedding cakes. For 90 years. And thus, wedding-cake flavor -almond- was established.
Okay, but why almond?
It is generally assumed that almond flavor for wedding cakes arrived with the influx of Southern Italians in New Orleans. Almond is a common flavor in Southern Italian sweets and let's not forget the age-old tradition of giving candy-coated almonds as wedding favors.

The sugared almonds represent the bittersweet life of a married couple. The sugar coating is added to the bitter almonds in the hopes that the newlyweds enjoy more sweet than bitter throughout their marriage. Five almonds for five wedding wishes: health, wealth, happiness, family, and long life.
So all wedding cakes are almond cakes?
Not necessarily. The almond-and-pineapple flavor combination is really just a regional tradition, contained to New Orleans and the surrounding areas, albeit a very long-standing regional tradition.
